Do you support e-mail for users of google's application for your domain and if yes what is the maximum number of e-mail account that are pushed to the device?

I can answer part of this for you. Google Apps for your domain is supported. I am using it without issue.

Our service only syncs one IMAP mailbox per NuevaSync account.

I too can confirm that Google Apps works very well with NuevaSync.
Currently I have push email, calendar and contacts working flawlessly from my google apps account.
