I can see about setting up something like Thunderbird for my account. However, it might be worth noting that if I connect my iPhone to GMail directly via. IMAP I see the folders as you'd expect. I only seem to not see these folders when going through Nuevasync. (I've pasted your original image again for clarity)
One thing that I know I have that might be different from everyone else is that I am using some IMAP-related GMail Labs features. I might try to disable those and see if that helps anything. I suppose it is possible that only 2-3 Nuevasync users are actually using the correct combination of Labs features to make this bug show up...

I wonder if this had something to do with it...
Gmail --> Settings --> Labels --> make sure All Mail is checked for "Show in IMAP". Mine was not (by my own choice back in the day). I still don't see "All Mail" yet, but I imagine it'll take a little while to sync back up with my iPhone.

I was pretty choosy about which labels I sent to IMAP. Spam and All Mail were definitely labels I chose to send to IMAP, though.
Interesting, though... the fact that you have this option at all means you have the "Advanced IMAP Controls" enabled as well. I just disabled mine (per my previous post) to see if that would maybe be causing a problem. Will see if my folders show up here sometime in the near future.

My Thunderbird client reports that the [gmail] folders do indeed exist:
This was a fresh Thunderbird 2 install (never installed it before)...

After looking at my list of folders in Thunderbird, I noticed that I had some weird extra labels. I have "[Gmail]All Mail" and "[Gmail]Sent Mail" and I am not sure where those came from. If Nuevasync is doing some sort of name matching, I guess it is possible that this could be causing some issues if "my" labels are conflicting with the system labels that Gmail is sending on its own.
I'll continue to do some experimenting and see if this fixes some things.

On the original topic of this e-mail, being able to archive messages from gmail, is there a way to change your default trash folder to all mail rather than the trash so that all you have to do is the old swipe and tap to archive rather than delete? I seldom delete anything and usually archive, so I'd rather have it take me a few extra seconds to actually delete something by moving it to the trash folder than to have it take me a few extra seconds to archive something by moving it to All Mail. Thanks

At present, no there's no way other than to roll your own by moving to all mail. However, we do plan to add something to the service. We're still figuring out precisely what it means to archive/delete a message in GMail, and how to do that over IMAP.

Would you be able to post some screen shots of how Windows Mobile Outlook folders should look. Because My folders structure looks nothing like that
specifically I do not have an "All Mail" Folder

One trick you can try (it involves having the Advanced IMAP controls turned on in Labs). is to Hide the TRASH folder from IMAP. After that, any email that gets deleted from the phone will be labeled "Deleted Messages" and then archived.

Hey guys, I know this is an old thread, but I have another question...
I like the archive behavior, but both imap and google sync behave in a way that I like..
Deleting an email from "All Mail", sends to trash.
At the moment, I can't find a way to delete mail to trash from my phone at all.
I know its an option in settings, but I don't want to do it this way all the time, just with some stuff!
any way i can be made to happen?

Hmm...if I understand your requirement correctly, the answer is no.
The phone only has one kind of 'delete', and you get to pick whether that is implemented as 'move to all-mail' or 'move to trash'.
You can move messages between folders, so it might be possible to for example do a manual move to all-mail to achieve the desired outcome.
